Pink Beet Frosting
-1 stick margarine (or butter), softened
-2 cups confectioner’s sugar
-2 tb beet puree (cooked or canned beets blended with water to the consistency of applesauce)
– 1 tsp vanilla
Cream butter until soft and fluffy with a mixer or a fork. Alternately add sugar and beet puree, beating well after each addition. Add vanilla and beat until light and fluffy, approx. 3 min. using a beater or 5 min. using a fork.
