Pb-filled Chocolate Cupcakes (Tutorial)

I’m really on a blogging roll. That’s what two snow days in a row does to a person.

On snow day #1 I made pb-filled chocolate cupcakes with chocolate ganache for my friend’s birthday. This was the first time I’ve ever made a filled cupcake and it was really very simple and a lot of fun, so I thought I might share the process with you here.

How to Make (Peanut-butter) Filled (Chocolate) Cupcakes:

Make some chocolate cupcakes. Duh.

Make some delicious pb frosting. This is just simply organic creamy pb mixed with some confectioner's sugar and soymilk.

Use a knife to dig a cone out of the cupcake. Cut the tip off the cone. (Eat the scraps.)

Stuff the hole with peanut-buttery goodness. Don't be skimpy.

Put the lid back on.

Make some ganache.

Spread ganache over the top of the cupcake, and pipe a cute little swirl of leftover pb frosting.
