Hugs and Kisses

In honor of the coming four-day weekend (due to some sort of teacher conference situated in, of all places, Atlantic City- makes you think a bit about the educational system in NJ), I made these lovely cookies which make great use of leftover Halloween candy.

My Chocolate Hugs and Kisses Cookies are made with a vegan chocolate cookie base (based on the Chocolate Thumbprint Cookies from Vegan with a Vengeance– a great cookbook) and topped with Pumpkin Spice Candy Corn, and Caramel Hershey’s Kisses (not vegan), , along with Hershey’s Hugs  (not vegan). If you haven’t already noticed, I think seasonal Hershey’s Kisses are just about the coolest things ever- there are always a ton of fun flavors. But if you don’t have any, plain old milk chocolate Kisses are just as good, or make thumbprint cookies instead.

Chocolate Hugs and Kisses Cookies

Makes 24

  • 1 c flour
  • 1/3 c cocoa powder
  • ¼ t baking soda
  • ¼ t salt
  • ¼ c oil
  • 1/3 c soymilk
  • ½ c brown sugar
  • 24 Hershey’s Hugs or Kisses

Preheat oven to 350° and line a baking sheet with parchment paper.

In a medium bowl, mix flour, cocoa powder, baking soda, and salt.

In a larger bowl, mix oil, soymilk, sugar, then add flour mixture.

Stir until a moist dough is formed.

Roll tbs of dough into balls and flatten slightly. Place about an inch apart on baking sheet.

Bake 8-10 mins. Immediately press a Hershey Hug or Kiss onto each. Cool completely before eating (so the chocolate will have time to set and not spill all over your hand)!

Yeah, they did, actually. How did you guess? In other news, the interview person is not answering me so I’m a wee bit worried. It’s been like three days since my reply.
